Happy With a Pie Crust

Roger will agree after 28 years of marriage, Ginger does not like to cook. I never have. Oh yes I like to eat! And I really don't mind cleaning up the kitchen. But for some reason, planning a menu for other people to eat and actually preparing the food is a HUGE chore to me. It has caused many an argument in our home.

Here in Haiti I have to cook. Especially if we want to eat. There is no Wendy's, Burger King, Apple Bees, etc.. Roger can't stop by Popeyes and pick us up some chicken. So I have been searching the Internet for EASY recipes that will satisfy Roger's need for bland and my desire for flavor. Not an easy task.

Yesterday I was actually happy with the results of my cooking and so was Roger. I had fixed sloppy joes the day before but needed to do something with the left overs (no matter what he tells you, Roger is picky about left overs.) I decided to try a sloppy joe pie. But I have made a pie crust only once before in my life and it was too complicated.

The recipe I found was so EASY! And it was actually good! It was flaky, the bottom didn't get to soggy and Roger liked it! The filling wasn't half bad either! A little corn. Kidney beans and cheese added to the sloppy joe mixture was also extremely easy.

If all my ventures in the kitchen were this easy, who knows I just might learn to enjoy cooking. There is always hope!
